November to February spells snowfall, but temperatures during this season are still warmer than other places in the North. Winters mean Aegean winds that cool off the continental climate up north. Macedonian fare is an interesting combination of Western European and Oriental cuisine. One should not leave Macedonia without sampling the Burek, which is a sort of pie mixed with cheese, minced meat, mushroom or spinach. It is best eaten with a yogurt drink.
